Ms. Kim's Famous Pasta Salad

Yummy, healthy pasta salad. Quick and easy. Cooking the pasta takes the longest time!

INGREDIENTS

1 lb. pasta, (preferably rotini or fusilli) cooked & drained.
1 cup Italian salad dressing (Newman's Own or Seven Seas).
Lots of diced/chopped vegetables...
I use the pre-diced mixes found at most grocery stores:
Tri-colored bell pepper mix
Diced vegetable mix
1 bunch green onions, sliced
1 can medium black olives, quartered
1 bunch radishes, sliced
1 jar marinated artichoke hearts, diced
1 jar of the tiny marinated corn on the cob, sliced
1 jar whole mushrooms
Salt and pepper to taste.
You can get more creative, like adding cucumbers, diced hard cheese, grape tomatoes, whatever your heart desires...

METHOD

  1. Combine all above ingredients into a very large bowl, toss and chill. (I usually chill with a glass of red). Put a lid over your bowl. Serve cold. It's yummy for days, especially hot days.
