Broccoli, Mushroom and Cherry Tomato over Ravioli

Healthy and light, this dish is good day or night.

INGREDIENTS

1/2 white or brown onion, diced
1 cup broccoli
1 cup of sliced brown mushrooms
1 cup of cherry tomatoes, sliced in half
4 garlic cloves, diced
1 package of raviolis of choice (I used fresh)
3 Tbsp of olive oil
salt and pepper to taste

METHOD

  1. Start boiling the water for your pasta in a normal pot. Add pasta when boiling and cook as package instructs.
  2. Then in a saucepan over low to medium heat, add olive oil and onions. After 2 minutes, add garlic and broccoli. Let sautee for several minutes, while stirring so as not to brown too much.
  3. Then add mushrooms. Again, after a few minutes and when the broccoli looks like its starting to lose its hardness, add the cherry tomatoes. You're only cooking these for a little while.
  4. Once the tomatoes start to get wrinkly, and the mushrooms and broccoli feel done, you are ready to enjoy!
  5. Pour over pasta, top with cheese, and serve.
