A nice way to use up 10 pounds of extra mashed potatoes you might have lying around in your fridge after your girlfriend's craving for mashed potatoes goes away.

INGREDIENTS

3 cups of mashed potatoes of any kind
3 eggs
pinch of grated cheese
5 tablespoons of vegetable oil
21 season blend
salt and pepper to taste
green onion to garnish, diced

METHOD

  1. Mix in a large bowl, the mashed potatoes, egg, cheese and spices.
  2. Put the vegetable oil in a pan and wait til it's nice and hot.
  3. Drop small globbing heaps of mashed potatoes into the frying pan.
  4. Cook until browned.
  5. Serve with a parmesan cheese or feta sprinkled on top, OR take a butter knife of sour cream across the top.
  6. Enjoy!
