Reese's Peanut Butter Chocolate Truffles

Wowsers! These are rich, so make sure you have a glass of water nearby or some coffee. But seriously, these are worth it.
INGREDIENTS
Filling:
1 10 oz. bag of Reese's peanut butter chips
1/4 cup of heavy cream
1 egg yolk
1 Tbsp. of butter
Covering:
1 bag of semi-sweet chocolate chips
1/2 bag of light cocoa melting chips
METHOD
- In a double broiler (I just rigged mine by placing a metal bowl over a pot, and made sure the water didn't touch the bottom of the bowl) melt your peanut butter chips with the cream over low heat (mostly just the steam). Keep stirring with wooden spoon.
- Once melted add butter and egg yolk and keep stirring until really nice smooth texture.
- Place bowl in fridge for a few hours to set up a bit.
- Once set, remove from fridge and begin spooning out pieces that you can then roll into 1 inch balls and place on wax paper.
- Then melt your semi-sweet chocolate chips for the dipping part in the double broiler. No cream necessary this time.
- Then once melted, carefully take your pb balls and roll and dip in melted chocolate with fork or pick, and replace back on wax paper, and then let set up in fridge.
- Once set up a little, melt your lighter cocoa melting chips and spoon into small ziploc baggie, seal, and cut a tiny tip off of one corner, and make your fancy little pattern. Then back in the fridge to set.
- Yum yum!
