Winter French Toast with Warm Buttered Rum Apple Compote

INGREDIENTS
French Toast:
4 slices bread (Brioche is best!)
2 eggs
1/4 cup milk
2 Tablespoons butter
Warm apples
2 granny smith apples, peeled and sliced thinly
3 Tablespoons butter
3 Tablespoons Rum
2 Tablespoons brown sugar
dash cinnamon
1/4 cup water
METHOD
- (Make apples first)
- Melt butter in medium saucepan over med/low heat, add apples. Toss apples to coat and saute over medium heat for 30 seconds, then add brown sugar and continue sauteing and stirring for 1 minute. Add water, cinnamon and rum, turn heat down to low and cook until apples are tender. Set aside to cool slightly so syrup will thicken.
- Beat together eggs and milk. Dip bread until fully soaked and add to medium sized skillet (with butter) over medium heat. Brown on both sides.
- Serve french toast on plates and spoon apple compote over the top.
