Winter French Toast with Warm Buttered Rum Apple Compote

INGREDIENTS

French Toast:
4 slices bread (Brioche is best!)
2 eggs
1/4 cup milk
2 Tablespoons butter
Warm apples
2 granny smith apples, peeled and sliced thinly
3 Tablespoons butter
3 Tablespoons Rum
2 Tablespoons brown sugar
dash cinnamon
1/4 cup water

METHOD

  1. (Make apples first)
  2. Melt butter in medium saucepan over med/low heat, add apples. Toss apples to coat and saute over medium heat for 30 seconds, then add brown sugar and continue sauteing and stirring for 1 minute. Add water, cinnamon and rum, turn heat down to low and cook until apples are tender. Set aside to cool slightly so syrup will thicken.
  3. Beat together eggs and milk. Dip bread until fully soaked and add to medium sized skillet (with butter) over medium heat. Brown on both sides.
  4. Serve french toast on plates and spoon apple compote over the top.
  5. Enjoy!
