Vegan Garlic Mashed Potatoes

You won't miss the butter or the milk in these mashed potatoes! With soy options abound, there's no need to rob a cow....just sit back and relax with this yummy for the tummy comfort food option.

INGREDIENTS

5 large russet potatoes, peeled and diced
1 whole garlic bulb, peeled
1/4 cup of warmed original soy milk (not vanilla)
1 cup of melted vegan margarine
2 Tbsp. salt (for the water)
1 Tbsp. of 21 season blend from Trader Joe's
Rosemary optional (best to soften in warm water)

METHOD

  1. In a large pot, boil diced potatoes and garlic cloves along with the salt for 20 minutes. Keep an eye so as not to overcook as they will shrink with too much time.
  2. Once cooked, strain into a large bowl the potatoes and the large chunks of garlic.
  3. Then add the warmed soy butter, soy milk and the spices, and mash with masher until desired consistency. Add more butter or milk if necessary. It's best to start with less and work your way up.
  4. So easy and such a treat! Yum!
