Have lots of Indian leftovers and don't feel like just reheating them? Add some new veggies and make a delicious, nutritious little meal!

INGREDIENTS

Indian food leftovers
Large handful of fresh spinach
1 roma tomato, diced
Cottage cheese or plain yogurt as garnish
Olive oil for pan

METHOD

  1. In a large frying pan, throw the Indian leftovers (mine consisted of the paneer, rice and chicken korma), the tomatoes, and the spinach and cook until spinach start to wilt down.
  2. The tomatoes will get softened, but not mushy. I like leaving the spinach a little firm (don't really want it looking like seaweed, since the paneer is so cooked down).
  3. Garnish with choice of cheese or yogurt, and bon appetit!
