Fried Egg Soft Taco with Tomato, Spinach and Mushrooms

Sometimes that gooey center of a fried egg is craved, but so are vegetables. This was my meeting in the middle. The softened yolk bursts open while eating the taco and makes for a creamy, hearty sauce surprise.

INGREDIENTS

2 eggs
1 roma tomato, diced
handful of fresh spinach
5 or 6 mushrooms, diced
2 corn tortillas
butter for pan

METHOD

  1. In a large pan, over medium heat, I added the butter and mushrooms. They don't take too long, so I added the tomato and spinach, and just cooked til the spinach lightly wilted and the tomatoes got warm and juicy.
  2. In a separate pan, I fried two eggs.
  3. And in yet another pan, I pan-warmed the tortillas.
  4. Then serve by adding an egg to each tortilla, top with sauteed veggies, garnish with cheese, salt, pepper, salsa...whatever your heart desires.
