Gluten Free Banana Bread

Just because it's gluten free doesn't mean its not good! This banana bread is so moist and delicate, you'll want to get old wheat out of your diet too!

INGREDIENTS

1 1/2 cups of sorghum flour
1/2 cup of almond meal
1/2 cup of corn starch
1 tsp. of baking soda
1/4 tsp. of salt
1/2 cup of butter, softened
3/4 cup of brown sugar
2 eggs
2 1/3 cups of mashed overripe banana
1/2 cup semisweet chocolate chips for good measure

METHOD

  1. Heat oven to 350 degrees.
  2. Combine flour, starch, meal, salt, baking soda in a large bowl.
  3. In another bowl, combine butter, brown sugar, stir in eggs and banana, mix thoroughly.
  4. Stir banana mixture into the flour slowly, and add chocolate chips. Combine thoroughly.
  5. Then pour mixture into a lightly greased 9 x 5 bread pan, or in my case, a tall-sided pie/quiche dish.
  6. Bake for 35-40 minutes in the pie dish, 50-60 in the bread pan. Always check with a toothpick when you think your close!
