Brian's Greek Salad

Now, I know people aren't going to say this is anywhere near a traditional Greek salad, but I have to say this little guy finds it's way into my dinner routine (along with my girlfriend's) at least 3 times a week. It's fast, easy, and pretty damn healthy, plus it'll actually fill you up! Take a look... don't knock it until you try it.

INGREDIENTS

1 Trader Joe's Hot House Cucumber
2 Trader Joe's Roma Tomatoes
1 Can of Jumbo Black Olives (no seeds of course) (Use Kalamata olives if you wanna get fancy OR traditional I guess...)
6 Table spoons of Trader's Romano Caesar Dressing
1/2 Container of Trader Joe's Mediterranean Feta Cheese Crumbles

METHOD

  1. Peel cucumber.
  2. Slice & dice tomatoes into bit sized chunks. Whatever you prefer to chew on.
  3. Slice the jumbo olives into halves.
  4. Apply feta cheese to the top.
  5. Pour on desired amount of dressing. (You won't need a ton, trust me!)
  6. Toss and enjoy!
